Descriptions of the fields that are exported using Admin Tool's "Export Items to CSV"
title - The title of the item.
id - The item ID of the item. (32 alphanumeric values)
snippet - Summary for the item
description - User generated. An item description.
licenseInfo - User generated. Includes any license information or restrictions.
token
guid - Globally unique identifier. This will be a large list characters that will make it unique in that org.
type - The type of the item. This is the type of Map, Application, Layer, or Tool type.
name - The name that was present when the a photo was uploaded.
properties - If it is set as a type of item in the organization (A JSON object that primarily applies to system requirements, Terms and Conditions, version, supported platforms, YouTube video ID, etc associated with the application.)
access
accessInformation - User generated. Credits the source of the item.
tags - A comma-delimited list of tags for the item. Tags are words or short phrases that describe the specific item.
typeKeywords -Adds additional type keywords to the item. Type keywords describe the type and should logically apply to all items of that type. Type keywords can be applied to any type of item, including hosted feature services.
spatialReference - The coordinate system of the item.

About "Type" and "Access" for Users
Type
Type is associated with the user's Esri Access, which determines if they can only use ArcGIS Online, or if they can use the other Esri Platforms, like GeoNET.
- If it's set to ArcGIS Only, that user can only access ArcGIS Online.
- If it is set to both, they can access those other platforms (not to be confused with products).
Access
Access is similar to a user's privacy settings.
- If it is set to Private, then their bio, etc. will not be available to others, and the username will not be searchable for other users.
- If it is set to Public, then everyone can search the user.
- If it is set to Org, then just those in the user's organization can search them.
